In this recipe, the potato is scooped out, stuffed with cottage cheese and celery. Always keep a few boiled potatoes in your refrigerator to assemble this recipe quickly. Scooped out potatoes left-over from this recipe can be mashed and used for potato tikkis, a quick sandwich filling or as a vegetable.

Ingredients


2 large potatoes, boiled with the skin on
salt to taste

To be mixed into a filling
1/2 cup grated paneer (cottage cheese)
1/2 cup grated mozzrella cheese or grated cooking cheese
2 green chillies, finely chopped
2 tbsp celery, finely chopped
1/4 tsp dried mixed herbs
salt to taste

Method
  1. Cut each potato horizontally into two halves.
  2. Scoop the centres of the potato halves a little, using a spoon so that a slight depression is formed for the filling.
  3. Sprinkle the potato halves with salt. Fill the potato halves with the filling mixture.
  4. Bake in a pre-heated oven at 200°C (400°F) for 4 to 5 minutes or until the cheese has melted.
  5. Serve hot.
