A delightful peach cheesecake on a crusty biscuit base.

Ingredients


For the crust
7 tbsp crushed marie biscuit
4 tbsp melted butter
1 tbsp sugar

For the filling
1 recipe cream cheese
1 can (450 grams) peaches, drained
3/4 cup thick curds (dahi)
3/4 cup castor sugar

For the decoration
whipped cream

Method

    For the crust

    1. Mix the biscuits, butter and sugar and press the mixture evenly into a 175 mm. to 200 mm. (7" to 8") diameter loose bottomed tin.
    2. Chill until firm.

    For the filling

    1. In a blender, liquidize the cream cheese with the curds and sugar.
    2. Chop half the peaches and add to the mixture. Leave aside the remaining half for decoration.

    How to proceed

    1. Spread the filling over the crust and put to set in the refrigerator. This will require approximately 45 minutes to 1 hour.
    2. Decorate with the remaining peaches and cream.
    3. Cut into slices and serve cold.

    Tips
    1. Use a muslin cloth to drain the curds. This takes about 15 to 20 minutes.
