Sweet corn, noodles, cheese – these are all ingredients that kids fall for, in any form. When these wonder ingredients come together as an exciting cutlet, it is all the more irresistible. These crunchy yet chewy cheesy noodle vegetable cutlets are also rich in calcium and protein, and can be made within minutes. All in all, a snack that both you and your kids will love.

Ingredients

1 1/2 cups cooked instant noodles
1/2 cup sweet corn kernels (makai ke dane) , cooked and crushed
2 green chillies , finely chopped
2 spring onions , finely chopped
3 tbsp tomato ketchup
1/2 cup grated processed cheese
1/2 cup bread crumbs
salt to taste
freshly ground black pepper (kalimirch) powder to taste

Other Ingredients
bread crumbs for coating

Method
  1. In a bowl, combine the noodles, sweet corn,green chillies, spring onions, ketchup, cheese, bread crumbs, salt and pepper and mix well using your hands.
  2. Divide the mixture into 12 equal portions and shape into cutlets.
  3. Coat the cutlets with dried bread crumbs and shallow fry in oil on both sides till golden brown.
  4. Serve hot with ketchup or green chutney.

Noodles, sweet corn, cheese and spring onion coated with bread crumbs form a nice cutlet. My 10 year old kept asking for more. We just stir fried it in a tava and not deep fried it.
