A delicious dip which contains no cheese, yet tastes like cheese. Your guests will need no pressing to take more helpings. For the calorie-conscious, omit the fresh cream.

Makes 2 teacups.

Ingredients


3 cups curds (dahi)
2 tbsp fresh cream
2 tsp finely chopped onions
2 tsp finely chopped capsicum
1/2 tsp finely chopped green chillies
salt to taste

For decoration
springs of parsley
chopped capsicum

To serve
a few carrot slices
a few cucumber slices
a few capsicum slices
salted biscuits, to serve

Method
  1. Put the curds in a thin cloth, tie and hang for 3 hours to allow the water to drain out.
  2. Take out the curds and add the cream, chillies, onions, capsicum and salt.
  3. Chill in the freezer compartment of a refrigerator.

How to serve

  1. Take out into the centre of a round dish. Decorate with sprigs of parsley and chopped capsicum. Surround with capsicum, cucumber and carrot slices. Make an outer ring of salted biscuits and serve.
