    For the paste

    1. Heat the oil in a pan and saute the onions and coconut till the onions turn translucent.
    2. Dry roast the red chillies, coriander seeds, mustard seeds, fenugreek seeds, cumin seeds, cinnamon, peppercorns and cloves in a pan and keep aside.
    3. Grind the coconut, onions, dry spices, turmeric powder and tamarind pulp to a smooth paste. Keep aside.

    How to proceed

    1. Heat the oil in a kadhi, add the ginger paste and onion and saute till the onion turns translucent.
    2. Add the cauliflower, potatoes, salt and 3/4 cup of water and cook on a medium flame till the vegetables are tender.
    3. Add the paste and coconut milk and simmer for some more time.
    4. Serve hot.

    1. Diced brinjal can be used instead of cauliflower as a variation.
