Cauliflower Soup recipe - How to make Cauliflower Soup

Preparation Time:    Cooking Time:     Makes 4 servings

2 cups chopped cauliflower
1 cup finely chopped onions
2 cups low-fat milk , 99.7% fat-free
2 tbsp chopped celery (ajmoda)
1 tsp oil
salt and freshly ground black pepper (kalimirch) to taste
  1. Heat the oil in a non-stick pan and sauté the onions on a medium flame for 1 to 2 minutes.
  2. Add the cauliflower and sauté for another 4 to 5 minutes.
  3. Add ½ cup of water and milk, mix well and bring to a boil, while stirring occasionally.
  4. Add salt and pepper, mix well and simmer till the cauliflower is partially cooked.
  5. Remove from the flame and allow it to cool slightly and then blend in a mixer to a smooth puree.
  6. Transfer the puree into a deep non-stick pan, add the celery and mix well.
  7. Serve hot.
