This recipe packs an irresistible combination of carrot and dates with a lemon dressing. Try this salad as a part of your meal if you are bored of eating only raw veggies or mashed dates to get the necessary fibre to prevent constipation. You can skip the almonds if you are weight conscious.

Ingredients

2 cups grated carrot
2 cups lettuce , torn
1/2 cup dates (khajur) , chopped
2 tbsp chopped and almonds (badam)

To Be Mixed Into A Dressing
2 tsp lemon juice
2 tsp olive oil
1/2 tsp freshly crushed peppercorns (kalimirch)
salt to taste

Method
  1. Immerse the lettuce in ice-cold water for 10 minutes. Drain thoroughly.
  2. Spread the carrots in the middle of the lettuce leaves and chill.
  3. Sprinkle the dates and almonds over the carrots.
  4. Just before serving, toss the dressing into the salad.
  5. Serve immediately.
