Ingredients


For decoration
salad leaves
pear halves

To serve
Salad Cream or Thousand Island Dressing

1 packet (11 grams) strong gelatine
1 1/2 cups orange juice
1 tbsp lemon juice
3 tbsp orange squash
1/4 tsp salt
3/4 cup shredded cabbage
1/3 cup grated carrots
2 tbsp chopped celery

Method
  1. Keep the cabbage, carrots and celery in cold water for 30 minutes.
  2. Dissolve the gelatine in 1 teacup of boiling water. Add the fruit juices, orange squash and salt.
  3. Cool and put to set.
  4. When the gelatine sets partially, add the vegetables and put to set again either in a big mould or in small individual moulds, as desired.
  5. When set, dip the mould in hot water and unmould on a plate.
  6. Surround with salad leaves and pear halves or any other fruit.
  7. Serve with salad cream or Thousand Island dressing.
