A crunchy, tangy accompaniment for boring meals! store the dry masala in an air-tight container and add to dals and vegetables as well for a variation in flavour.

For the dry masala

  1. Dry roast all the ingredients together on a tava (griddle) till you get a nice aroma.
  2. Remove from the flame and keep aside to cool.
  3. Blend to a fine powder in a blender. Keep aside.

How to proceed

  1. Mix the carrots, lemon juice, coriander and salt together in a bowl.
  2. Add the prepared dry masala and mix well.
  3. Keep aside to marinate for atleast 1 hour.
  4. Cover and refrigerate till required. This pickle will last for a day in the refrigerator.

Carrot relish, the name says it all, super relishing pickle, with so less of salt, but yet so tasty, the roasted masalas added to the carrot has blend so well with it. Enjoyed best when it is chilled.
