If you have an insatiable sweet tooth, try desserts like this one that are healthier and leave you satisfied. These yummy carrot halwa stuffed pancakes are delightful. I have experimented with an easier and healthier version of Gajar Ka Halwa. You don't have to slave for hours to make a rich calorie laden halwa. The carrots are first steamed and then sautéed in a little ghee. I have also used skimmed milk powder instead of whole milk. The milk powder gives it a rice milky flavour of khoya and also cuts out all the extra calories which whole milk would have added. A great dish for entertaining too!

Ingredients


For the pancakes
1/2 cup plain flour (maida)
1/2 cup cornflour
3/4 cup milk
a pinch of salt
2 tsp melted butter

For the carrot halwa
3 cups grated carrot
4 tbsp sugar
5 tbsp skimmed milk powder
2 tsp almonds (badam), slivered
a pinch cinnamon (dalchini) powder
2 tbsp ghee

Method
  1. For the pancakes
  2. Mix the plain flour, cornflour, milk, salt and ½ cup of water. Mix well ensuring that no lumps remain.
  3. Grease a 125 mm. (5") diameter non-stick pan with a little butter.
  4. Pour 2 tablespoons of the batter and tilt the pan around quickly so that the batter coats the pan evenly.
  5. When the sides start to peel off, turn the pancake around and cook the other side for 30 seconds.
  6. Repeat for the remaining batter, greasing the pan with butter when required and make 11 more pancakes.

For the carrot halwa

  1. Steam the grated carrots over boiling water for 3 minutes.
  2. Heat the ghee, add the steamed carrots and sauté for 2 minutes.
  3. Add the sugar and cook for 2 to 3 minutes. Then add the milk powder and cook for a few minutes, stirring continuously.
  4. Add the almonds and sprinkle the cardamom powder on top.
  5. Mix well and keep aside. Divide into 12 portions.

How to proceed

  1. Spread a portion of the halwa on each pancake and roll up.
  2. Serve immediately.
