From the land of the 'pina colada', a sweetened coconut and pineapple filling rolled into pancakes and topped with a warm custard sauce.

Ingredients



For the pancake
Pancakes

For the custard sauce
Custard Sauce

For the filling
1 small can (450 grams) pineapple slices, finely chopped
6 tbsp grated coconut
2 tbsp sugar
2 tbsp butter

Method

    For the filling

    1. Heat the butter and the sugar in a pan and toss in the pineapples and coconut.
    2. Stir till the sugar dissolves and keep aside.

    How to proceed

    1. Fill the pancakes with the filling and roll them into cylindrical shape.
    2. In a pan, heat the custard sauce and gently toss in the rolled pancakes.
    3. Turn over, cook for half a minute and serve warm.

    Tips
    1. You can serve these with coconut cream sauce or plain custard sauce.
