Caribbean Black Bean Dip

A delicious black bean dip cooked in Caribbean style. Serve with tortillas or with our Indian bread Roti and Naan.

Makes 1 cup


Ingredients

1 cup cooked black beans (about 1/2 cup dry) , reserve cooking liquid
1 onion chopped
4 cloves (laung / lavang) of garlic (lehsun) , minced
1/4 tsp grated ginger (adrak)
1/2 tsp all spice powder
1/2 tsp cumin seeds (jeera)
1/2 tsp of chopped , fresh thyme or 1/8 tsp dried thyme
1/4 tsp ground cloves (laung / lavang)
1/4 tsp nutmeg (jaiphal)
1/4 tsp cinnamon (dalchini)
1 tsp tabasco sauce or to taste
1 tbsp oil
3 tbsp chopped cashewnuts (kaju)
1 tbsp tahini
lemon juice to taste
salt to taste

Method
  1. Heat oil in a pan and saute garlic, ginger and onions. Add spices(all spice, cumin, thyme, cloves, nutmeg, cinnamon) and Tabasco sauce in oil and cook until onions are soft.
  2. In a blender or food processor, blend 1/4 cup of bean cooking liquid and cashew nuts to a paste.
  3. Add the cooked beans along with a little more of the cooking liquid, blending until smooth.
  4. Blend in the onion and garlic mixture, and tahini.
  5. Add lemon juice and salt to taste.
  6. Serve.
