Orange and cardamom team together in this delicious cheese cake that is made with our traditional shrikhand.

Ingredients


1 (50 mm. (6") diameter) vanilla sponge cake

To be mixed into a soaking syrup
3 tbsp water
1 tbsp orange squash
1 tsp brandy/ rum (optional)

For the cheesecake
1 cup (200 grams) fresh cream
3/4 cup shrikhand
1/4 cup orange segments
2 tbsp orange squash

For the garnish
1/2 cup whipped cream
1/2 cup orange segments

Method
  1. Slice the sponge horizontally into 2 equal halves. We will need only one layer of the sponge.
  2. Place the sponge in a 150 mm. (6") loose bottomed cake tin.
  3. Soak the sponge with the soaking syrup and keep aside.

For the cheese cake

  1. Whip the cream and keep aside.
  2. Mix together the shrikhand and orange squash.
  3. Fold the cream in the shrikhand mixture.

How to proceed

  1. Pour the cheesecake mixture over the soaked sponge and refrigerate till it is firm.
  2. Decorate with whipped cream and orange segments and serve chilled.
