A colourful and tasty vegetable.
- Heat the oil. Fry the mustard seeds lightly and add asafoetida, tomatoes, capsicum pieces, 1 teacup water and cook for a few minutes. Add the pineapple pieces.
- Add the mixed masala and stir well until cooked.
- Add the grated coconut and chopped coriander.
- Serve hot sprinkled with potato wafers on top.
