Caldine Pea Soup

Ingredients


2 cups green peas, shelled
1 onion, chopped
1 tsp ginger, chopped
1/2 tsp garlic, chopped
4 green chillies, chopped
2 tbsp chopped coriander (dhania)
1 tbsp mint leaves (phudina), chopped
1/4 cup fresh coconut, grated
2 tbsp butter
salt to taste

For the garnish
1 tbsp fresh cream

Method
  1. Boil the peas, drain and keep aside.
  2. Heat the butter in a saucepan, add the onion, ginger, garlic, and green chillies and fry for a few minutes.
  3. Add the boiled peas, coriander, mint and coconut and remove from the fire.
  4. Cool and blend with 2 1/2 cups of water till smooth.
  5. Add salt and reheat the soup.
  6. Garnish with the cream and serve hot.

Tips
  1. Do not use the water in which the peas are cooked for the soup as it has a peculiar odour.
  2. To thicken the soup, you can add 2 teaspoons of cornflour dissolved in water to the soup while heating.
