Cabbage rolls, this delectable continental starter is an interesting way to recharge your vitamin c, a and protein quotient. This dish helps boost immunity and improves the overall sense of well-being. I’ve substantially reduced the calories by using low-fat paneer and baking the rolls instead of frying them.

Ingredients


For The Stuffing
2 tsp oil
1/4 cup finely chopped onions
1 green chilli , finely chopped
1 1/2 cups finely chopped and
boiled mixed vegetables
(french beans , carrots ,
green peas , cauliflower)
salt and freshly ground black pepper powder to taste

Other Ingredients
12 large cabbage leaves
salt to taste
1/4 tsp oil for greasing
1 1/2 cups tomato gravy
1/3 cup crumbled low-fat paneer

Method
  1. For the stuffing
  2. Heat the oil in a deep non-stick pan, add the onions and green chillies and sauté on a medium flame till they turn translucent.
  3. Add the mixed vegetables, salt and pepper, mix well and cook on a medium flame for another 2 to 3 minutes. Keep aside.

How to proceed

  1. Boil a vesselful of water, add a little salt and immerse the cabbage leaves in it for a minute. Drain thoroughly and keep aside.
  2. Divide the stuffing into 12 equal portions and keep aside.
  3. Place a cabbage leaf on a clean dry surface, place a portion of the stuffing at one end of the leaf and top it with 1 tbsp of tomato gravy.
  4. Roll the leaf tightly from the edge to seal the stuffing.
  5. Repeat with the remaining leaves and stuffing to make 11 more rolls.
  6. Arrange the rolls on a greased baking tray.
  7. Warm the remaining tomato gravy to boil, pour over the rolls and spread it evenly.
  8. Sprinkle the paneer evenly over it and bake in a pre-heated oven at 200ºc (400ºf) for 10 minutes. Serve immediately.
