Straight from the kitchens of mexico, burrito is the first thing that comes to our mind when we think of international wraps. The combination of guacamole, refried beans and oodles of cheese makes this traditional wrap truly irresistible.

Makes 4 burritos


Ingredients


For The Guacamole
3/4 cup ripe avocado pulp
1 tsp lemon juice
1/4 cup finely chopped onions
1/4 cup finely chopped tomatoes
1 tsp finely chopped green chillies
1 tsp finely chopped garlic (lehsun)
salt to taste

For The Refried Beans
1 1/2 tsp oil
3 tsp finely chopped garlic (lehsun)
1/2 cup finely chopped onions
1 cup finely chopped tomatoes
1/4 cup finely chopped capsicum
1 cup soaked , cooked and drained rajma (kidney beans)
1 tsp chilli powder
1 tsp roasted cumin seeds (jeera) powder
salt to taste

Other Ingredients
4 tortillas
1 cup finely chopped tomatoes
1 cup finely chopped spring onions
8 tbsp sour cream
8 tbsp grated processed cheese
4 tbsp crushed corn chips

Method
For the guacamole

  1. Combine all the ingredients in a bowl and mash well using a fork and refrigerate for at least an hour. Keep aside.

For the refried beans

  1. Heat the oil in a deep pan, add the garlic and onions and sauté till the onions turn translucent.
  2. Add the tomatoes and sauté for another 3 to 4 minutes.
  3. Add the capsicum, rajma , chilli powder; cumin seeds powder and salt, mix well and cook for 5 minutes or till the mixture is dry and keep aside.

How to proceed

  1. Place a tortilla on a clean dry surface and arrange ¼th of the refried beans in a row in the centre of the roti.
  2. Arrange ¼ cup each of each tomatoes and spring onions over it.
  3. Spread ¼th of the guacamole and 2 tbsp of sour cream over it.
  4. Finally sprinkle 2 tbsp of cheese and 1 tbsp of corn chips over it and roll it up tightly.
  5. Repeat with the remaining ingredients to make 3 more burritos.
  6. Wrap a tissue paper around each burrito and serve immediately.

I like my burrito spicy so I added a little ready mexican seasoning to the refried beans.Guacamole and sour cream add flovour to the wrap and the crushed corn chips give a nice crunch, in fact I added more crushed corn chips then mentioned in the recipe.
