An off-beat dip, which offers a radically different alternative to tomato salsa and other dips commonly served with bread. A cheesy, saucy dip with a very rich and intense mouth-feel derived from cheese, complemented finely by the chewy textures of broccoli and mushrooms, this flavourful and wholesome Broccoli and Mushroom Dip is a great accompaniment with garlic toast.

Ingredients

1/2 cup finely chopped and blanched broccoli
1/2 cup finely chopped mushrooms (khumbh)
2 tbsp butter
1/4 cup finely chopped onions
1/2 tsp garlic (lehsun) paste
1/4 tsp green chilli paste
2 tbsp plain flour (maida)
1 1/4 cups milk
3/4 cup grated processed cheese
salt and freshly ground black pepper (kalimirch) to taste

For Serving
garlic (lehsun) bread toast

Method
  1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add the garlic paste and green chilli paste and sauté on a medium flame for a few seconds.
  3. Add the plain flour and cook on a medium flame for 30 seconds, while stirring continuously.
  4. Add the milk and cheese, mix well and cook on a medium flame for 2 more minutes, while stirring continuously.
  5. Add the broccoli, mushrooms, salt and pepper, mix well and cook on a medium flame for another minute, while stirring occasionally.
  6. Serve immediately with garlic toast.

This is an amazing dip and great to start of a party with....white sauce made with garlic and green chillies gives a nice aroma and taste to this unique dip....this dip calls for broccoli and mushrooms but you can use any vegetables of your choice...so what are you waitting for go ahead and make this dip.....
