Broccoli and Mushroom Dip

A generous helping of cheese adds a delectable texture to this creamy, saucy dip, which is full of the flavour and goodness of broccoli and mushrooms.

Ingredients

Method
  1. Boil a vesselful of water. Add the broccoli and continue boiling for 2 minutes.
  2. Drain and discard the water and put the broccoli in a vesselful of ice-cold water.
  3. Drain after 5 minutes, discard the water and keep the broccoli aside.
  4. Heat the butter in a pan and sauté the onions in it for 1 minute.
  5. Add the garlic and green chillies and sauté again for a few seconds.
  6. Add the flour and sauté for at least 1½ minutes on a slow flame.
  7. Add the milk and cheese and cook till the mixture thickens.
  8. Add the broccoli, mushrooms, salt and pepper and mix well.
  9. Serve warm with pita chips and cream crackers.
