Bread and Butter Pudding ( Microwave Recipe)

A quick variation of the classic bread and butter pudding. You can even use up any left-over slices of bread to make this light and delicious pudding with a lovely muesli and brown sugar crust.

Ingredients

2 bread slices
2 tsp butter
2 tbsp brown sugar
2 tbsp muesli

To Be Mixed Together For The Custard
1 cup milk
1 cup cream
4 tbsp cornflour
5 tbsp sugar
1/4 tsp vanilla essence
2 tbsp raisins (kismis)

Other Ingredients
butter for greasing

Method
  1. Apply butter on both sides of the bread slices and cut each slice into 2 diagonally.
  2. Grease a 175 mm. X 125 mm. (7" x 5") microwave safe dish and arrange the bread slices on the base of the dish.
  3. Sprinkle the meusli on top of the bread slices.
  4. Pour the custard mixture gently along the sides of the pan, taking care not to pour the mixture on top of the slices.
  5. Sprinkle the brown sugar on top of the bread slices and keep the dish aside for 5 to 10 minutes to allow the bread to soak in the custard.
  6. Microwave on high for 2½ minutes. Allow the pudding to hold for 10 to 15 minutes and serve warm.
