A smooth green coloured ice-cream with full flavour of bottle gourd. Its unique taste will make you demand for more.

Ingredients

500 gms bottle gourd (doodhi / lauki) , grated
1 cup sugar
3 cups heavy cream
2 tbsp honey
1/2 tsp cardamom (elaichi) powder

Method
  1. Combine the bottle gourd, sugar and cardamom powder in a non-stick pan, mix well and cook till the bottle gourd is soft and cooked and no water is left.
  2. Remove from the flame and keep aside to cool completely.
  3. Add the the cream and honey and whisk lightly.
  4. Pour the mixture in an air tight container and freeze till almost set.
  5. Remove in a bowl and beat using an electric beater for 2 minutes.
  6. Transfer back and freeze till completely set.
  7. Serve chilled.
