Based on the famous Russian beet soup. Must be served with sour cream.

Ingredients


1 recipe Basic Brown Stock
1 large or 2 small beetroots
1/2 cup fresh cream
1/2 tbsp lemon juice
1 tbsp butter
2 tsp plain flour (maida)
salt to taste
black pepper (kalimirch) powder to taste

Method
  1. Boil the beetroots with the skins. Peel off the skins and grate the beetroots.
  2. Heat the butter in a vessel and fry the flour for a little time.
  3. Add the stock and the grated beetroots.
  4. Boil the soup for 30 minutes.
  5. Add salt and pepper.
  6. To make sour cream, beat the cream and add the lemon juice.
  7. Serve hot with a teaspoon of sour cream in each cup, or mix the cream in the soup and serve.
