Blushing Cheese Tarts

A cold dessert of vanilla flavoured cheesecake in tartlets topped with a strawberry sauce.

Ingredients


For The Strawberry Sauce
1 cup crushed strawberries
7 tsp sugar
2 tsp levelled , cornflour
1 cup water
1/2 tbsp lemon juice
a few drops red colouring

For The Tarts
200 gms plain flour (maida)
100 gms butter
1 tbsp powdered sugar
a pinch of salt

For The Filling
1 recipe cream cheese
3/4 cup thick curds (dahi)
4 to 5 tbsp sugar
1/2 tsp vanilla essence

For The Topping
strawberry sauce , recipe above

Method
For the strawberry sauce

  1. Mix all the ingredients and cook for a few minutes.

For the tarts

  1. Sieve the flour and salt to gether.
  2. Rub the butter into the flour with the fingertips. Add the sugar and mix well.
  3. Gradually add enough ice-cold water ( approx. 2 to 3 tablespoons) to make a dough. Refrigerate for 10 to 15 minutes.
  4. Lightly flour the rolling pin and the pastry board.
  5. Roll out the pastry into a 6 mm. (1/4") thickness.
  6. Press it into a 200 mm. (8") diameter pie dish for making tarts.
  7. To make smaller tarts, cut rounds of pastry usinga large fluted cutter and press into patty tins (which need not be greased unless new).
  8. Prick all over with a fork.
  9. Bake blind in a hot oven at 230 degree f (450 degree f) ofr 10 to 15 minutes.
  10. Cool the tart cases.

For the filling

  1. In a blender, liquidize the cream cheese, curds and sugar.
  2. Taste and add extra sugar if required. Add the vanilla essence.

How to proceed

  1. Fill each tart with a little filling. Refrigerate till the filling is firm.
  2. Top with strawberry sauce.
  3. Serve chilled.

Tips
  1. These need to be set for a few hours before you can pour the sauce over.
  2. Variation : DAINTY CHERRY / PEACH CHEESECAKE :
  3. Use cherry sauce or peach sauce, instead of strawberry sauce.
