Ingredients


To Be Mixed Into A Dressing
1 tbsp lemon juice
1/2 tsp sugar
1 tbsp oil (optional)
salt to taste

Other Ingredients
175 gms chawli (cow pea / lobhia)
1 tomato , finely chopped
1 onion , finely chopped
1 capsicum , finely chopped
1 cucumber , finely chopped
1 slit green chilli , finely chopped
1 tbsp chopped coriander (dhania)
lettuce leaves

Method
  1. Boil the beans until cooked. Drain.
  2. Add the tomato, onion, capsicum, cucumber and green chilli.
  3. Pour the dressing over the salad. Chill.
  4. Arrange the salad on a lettuce bed. Sprinkle with coriander leaves.
  5. Serve cold.

Black eyed Bean salad is supremely healthy. Its almost a one dish meal as its not exactly light. Its protein content and dressing make it a must have recipe for all!
