Calcium laden fresh bean sprouts in a spicy dressing.

Ingredients


1 1/2 cups bean sprouts
1/4 cup capsicum, thinly sliced

For the dressing
1 clove of garlic (lehsun), crushed
1 tbsp soy sauce
1/2 tsp sugar
1/2 tsp chilli powder
1 tbsp vinegar
1 tbsp peanuts, crushed
1 1/2 tsp oil

For the garnish
1 spring onion, chopped
2 tbsp chopped coriander (dhania)

Method

    For the dressing

    1. In a pan, heat the oil and fry the garlic. Keep aside. Drain the oil.
    2. Mix the garlic with the vinegar, soya sauce, sugar, chilli powder, red chilli and peanuts.

    How to proceed

    1. In a bowl, place the bean sprouts and capsicum and pour the dressing over it.
    2. Toss the salad.
    3. Serve chilled garnished with spring onions and coriander.

    Its a refreshing salad with quite a heavy dose of dressing! Loved the effect of soy and peanuts and the vinegar! Lots of flavour and lots of nuttiness. Nice and simple!
