Bean sprouts are full of vitamins and easy to digest. This easy to make salad which is healthy, colourful and crunchy can be enjoyed at any time of the day.

Ingredients

1 cup bean sprouts , washed and drained
1 cup cucumber , peeled and cut into strips
1/2 cup carrot , peeled and cut into jullienes
1/2 cup chopped spring onions
1/2 cup apple cubes

To Be Mixed Into A Dressing
2 tbsp lemon juice
1 tbsp castor sugar
2 tbsp olive oil
1/2 tsp mustard (rai / sarson) powder
salt and pepper powder to taste

Method
  1. Combine the bean sprouts, cucumber, carrots and spring onions in a bowl and refrigerate to chill.
  2. Just before serving, add the apples and dressing and toss well.
  3. Serve immediately.
