Fresh bean sprouts in a peanut chilli dressing.

Ingredients


1 1/2 cups bean sprouts
1/4 red capsicum, thinly sliced

For the dressing
1 clove garlic (lehsun), crushed
1 tbsp soy sauce
1/2 tsp sugar
1/2 tsp chilli powder
1 tbsp vinegar
1 finely sliced red chilli
2 tbsp ground peanuts
1 tbsp oil

For the garnish
1 spring onion, chopped
chopped coriander (dhania)
strips of yellow pepper and red pepper

Method

    For the dressing

    1. In a pan, heat the oil and fry the garlic. Keep aside. Drain the oil.
    2. Mix the garlic with the vinegar, soya sauce, sugar, chilli powder, red chilli and peanuts.

    How to proceed

    1. In a bowl, place the bean sprouts, capsicum and red chilli and pour the dressing over it.
    2. Toss the salad.
    3. Serve chilled garnished with spring onions, coriander, yellow and red peppers.

    Tips
    1. You can add cucumber or lettuce if you like.

    I added the cucumber and lettuce. It is a refreshing dish! the nutty flavours with the fresh vegetables blend well together! Its delicious!
