So easy yet unbelievably flavourful, the Batata chi Bhaji is a no-fuss preparation of potatoes perked up with the traditional Maharashtrian tempering of cumin seeds, curry leaves and green chillies, with crushed peanuts for crunch, aroma and an irresistibly nutty flavour.

  1. Heat the oil in a broad non-stick pan, add the cumin seeds.
  2. When the seeds crackle, add the curry leaves, green chillies and the potatoes, mix well and cook on a medium lame for 1 minute.
  3. Add the peanuts, sugar and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Serve hot garnished with coriander.

This is such an instant recipe.. It hardly takes 2 minutes to cook.. The roasted peanuts add a great and refreshing taste to the bhaji..
