A good old fashioned ice- cream which is an all time favourite. It only seemed befitting to begin this cookbook with a Vanilla Ice-cream that's absolutely divine and luscious. 2 1/2 cups milk
4 tbsp sugar
1 tbsp cornflour
1/2 cup (100 grams) fresh cream
1 tsp vanilla essence

  1. Dissolve the cornflour in ¼ cup of milk and keep aside.
  2. Put the remaining milk to boil in a pan, add the sugar and dissolved cornflour and simmer for 4 to 5 minutes. Cool completely.
  3. Add the cream and vanilla essence and mix well.
  4. Pour into a shallow container. Cover and freeze till it is almost set.
  5. Divide the mixture into 2 batches and churn each batch separately in a blender till it is smooth.
  6. Transfer each of the two batches into a shallow container. Cover and freeze till it is firm. Scoop and serve.
