Banana and coffee bavarois is a fruit flavoured pudding or bavarois recipe. The milk, coffee essence and egg yolk are cooked on a sauce pan and then folded into a banana based creamy gelatinous mixture.Serve cold with whipped cream as decoration.

Ingredients:
450 ml milk
2 eggs, seperated
2 tbsp coffee powder
2 very ripe bananas
4 tsp powdered gelatine
3 tbsp water
300 ml heavy cream

Method


    Method:

    1. Beat 1/3 (one-third) of the milk with the egg yolks and coffee essence in a saucepan.
    2. Cook over low heat until the mixture thickens.
    3. Pass through a sieve into a bowl.
    4. In another bowl, mash the bananas thoroughly to form a smooth puree.
    5. Beat in the remaining milk.
    6. Dissolve the gelatine in the water and stir half into each bowl.
    7. Fold half the cream into each mixture.
    8. Beat the egg whites until stiff, and fold half into each mixture.
    9. Spoon the two mixtures alternately and unevenly into a 900ml jelly mould and put in the refrigerator until set.
    10. When set, turn the bavarois out on a serving dish and pipe whipped cream over and around it to decorate .
