Ingredients


For the vegetables
2 1/4 cups mixed boiled vegetables (french beans, carrots, )
1 chopped onion
1 tsp chilli powder
1 tbsp butter
salt to taste

For the spinach sauce
1 1/2 cups chopped spinach (palak)
200 gms (7 oz.) cream
3/4 cup White Sauce (For Baking)
salt and black pepper (kalimirch) powder to taste

For the baking
5 to 6 tbsp grated cheese

Method
For the vegetables

  1. Heat the butter and fry the onion for 1 minute.
  2. Add the vegetables and cook for 1 minute.
  3. Add the chilli powder and salt.

For the spinach sauce

  1. Cook the spinach with very little water. If you like, add a pinch of soda bi-carb.
  2. When cooked, blend in a liquidiser. Strain.
  3. Beat the cream, add the spinach puree, white sauce, salt and peppeer and mix well.

How to proceed

  1. Mix the vegetables, sauce and half the cheese.
  2. Spread on a greased baking dish, sprinkle the balance cheese on top and bake in a hot oven at 230 degree C (450 degree F) for 15 to 20 minutes.
  3. Serve hot.

Excellent recipe to help kids eat spinach without nagging! Baked Vegetables in Spinach Sauce is cheesy and succulent and makes for a great one-dish meal! Extremely nutritious and flavoursome. Thank you! :)
