Baked stuffed tomatoes, a low-fat paneer and onion filling baked inside tomatoes adds an aesthetic flavour that is unique to this healthy 65-calorie appetiser. I have used the stuffed tomato as a part of the sizzler, page… however, you can serve it as a starter by itself or simply serve in a spicy gravy on a bed of rice.

4 medium tomatoes
2 tsp oil
1/4 cup chopped onions
1/2 tsp finely chopped green chillies
1/2 cup chopped and boiled mixed
vegetables (french beans, carrots,
cauliflower , green peas)
1/3 cup crumbled low-fat paneer
salt to taste

Other Ingredients
1/4 tsp oil for greasing

  1. Cut the tops of the tomatoes and scoop out the centre pulp. Keep the scooped tomatoes and pulp separately.
  2. Heat the oil in a kadhai, add the onions and green chillies and sauté on a medium flame till the onions turn translucent.
  3. Add the mixed vegetables, paneer, salt and tomato pulp, mix well and cook on a medium flame for 2 minutes. Keep aside.
  4. Divide the mixture into 4 equal portions and stuff each scooped tomato with a portion of the mixture.
  5. Arrange the stuffed tomatoes on a greased baking tray and bake in a pre-heated oven at 200ºc (400ºf) for 10 minutes.Serve hot.

Tomatoes are full of lycopene and cooked tomatoes contain more of lycopene, an antioxidant which helps in fighting free radicals. For this reason, I tried this recipe and being Tarla Dalal was definitely tasty but so simple to make and sooo damn healthy!!....truly amazin..I can have it plain too...
