Baked Pancakes In Paprika Sauce

Ingredients


For the pancakes
100 gms (4 oz.) plain flour (maida)
240 to 270 ml (8 to 9 fl. oz.) milk
1 egg (optional)
2 tsp melted butter or ghee

For the paprika sauce and stuffing
1 cup milk
3 tbsp butter
2 tbsp cornflour, levelled
1/2 tsp chilli powder
1 chopped onion
salt to taste
1 1/2 cups mixed vegetables finely chopped
salt to taste

For the baking
100 gms (4 oz.) cream
2 tbsp thick curds (dahi)
6 tbsp grated cheese
salt to taste

For decoration
poatato waffers

Method
For the pancakes

  1. Mix the flour, milk, egg and salt into a batter. Keep aside for 20 minutes.
  2. Prepare small pancakes in a frying pan, using a little butter. Use a non-stick frying pan if not using egg.

For the paprika sauce and stuffing

  1. Heat the butter and fry the onion till golden in colour.
  2. Add the cornflour and fry again for at least 2 minutes.
  3. Add the chilli powder and fry again for a few seconds.
  4. Add the milk and go on stirring and cooking until the mixture is thick.
  5. Add the boiled vegetables and salt.

How to proceed

  1. Beat the cream until thick.
  2. Add the curds, salt and half of the cheese. Mix well
  3. Fill the pancakes with the vegetable mixture.
  4. Arrange all the pancakes on a greased baking dish.
  5. Pour the cream on top, sprinkle the remaining cheese and bake in a hot oven at 230 degree C (450 degree F) for 15 minutes
  6. Surround with potato wafers and serve hot.

Quite an elaborate dish! Its interesting to realize how tasty baked pancaked can be! the paprika sauce is an unusual accompaniment but i enjoyed it!
