Baked Mexican Rajma, a delicious baked dish with an Indian touch. The melted cheese on the top adds extra taste and flavour to the dish.

Baked Mexican Rajma recipe - How to make Baked Mexican Rajma

Ingredients

For The Rajma Layer
2 tbsp oil
1/4 cup fine chopped onions
3 chopped green chillies
2 chopped tomatoes
1 tsp chopped garlic (lehsun)
1 cup boiled rajma (kidney beans)
salt to taste
1/2 tsp cumin seeds (jeera) powder
2 tsp red chilli powder
1 tsp sugar

For The Salsa
2 blanched and finely chopped tomatoes
1 green capsicum roasted and flame and finely chopped
salt to taste
1 tsp red chilli powder
1/2 tsp sugar
1 tsp vinegar
1 tsp dried oregano

For The Avocado Mix
1 cup boiled and mashed avocado
1 chopped tomato
1 chopped onion
2 tbsp sour cream
3-4 tortillas
1 cup grated processed cheese
red dry chilli flakes to taste
Method

For the rajma layer

    For the rajma layer
  1. Heat oil in pan and add onions and green chillies and saute till onions turn pink, add garlic and tomatoes.
  2. Add boiled and lightly mashed rajma, salt, cumin seeds powder, chilli powder, sugar and mix well.

For the salsa

  1. Combine all the ingredients in a deep bowl and mix well.

  1. Mix all the ingredients in deep bowl and keep aside.

How to proceed

  1. Grease a oven proof baking with butter and place one tortilla.
  2. Evenly spread the rajma mixture on top of the tortilla.
  3. Place another tortilla on top of the rajma mixture and evenly spread the salsa over it.
  4. Top it with a tortilla and evenly spread the avocado mixture on it.
  5. Top it with a tortilla, sprinkle cheese and chilli flakes and bake in a preheated oven for 5 minutes at 180°C (360°F) or till the cheese melts.
