Ingredients


2 1/2 cups fenugreek (methi) leaves, chopped
3/4 cup chopped spinach (palak)
1/2 cup chopped onions
1 green chilli, chopped
1/2 cup chopped paneer (cottage cheese)
1/4 cup grated processed cheese
2 tbsp milk
2 tbsp oil
salt to taste

To be mixed together for the potato layer
3 potatoes, boiled and mashed coarsely
2 tbsp chopped coriander (dhania)
1 tsp chopped green chillies
1 tsp lemon juice
salt to taste

Method
  1. Boil the fenugreek leaves and spinach in 2 tablespoons of water until soft. Drain and blend in a blender.
  2. Heat the oil and fry the onions until golden in colour. Add the green chilli and fry again for a few seconds.
  3. Add the fenugreek, spinach, paneer and salt and mix well.
  4. Spread the potato layer evenly at the bottom of a baking dish and spread the fenugreek and spinach mixture on the top.
  5. Cover with the cheese and milk bake in a hot oven at 200°C (400°F) for 15 to 20 minutes.
  6. Serve hot.
