Bajra Cheesy Veg Surprise is a very healthy and tasty recipe.

1 cup whole bajra (black millet)
1 tbsp par-boiled rice (ukda chawal)
1/2 cup semolina (rava)
1/2 cup curds (dahi)
1/2 cup urad dal (split black lentils)
1 tomato , finely chopped
1 capsicum , finely chopped
1/2 cup finely chopped coriander (dhania)
3/4 tsp ginger (adrak) green chilli paste
6 cheese cubes
2 tsp butter
salt to taste

  1. Soak the whole bajra along with parboiled rice in enough water for 6 – 8 hours.
  2. Wash thoroughly and soak urad dal in enough water for an hour or two.
  3. Grind the soaked whole Bajra and parboiled rice and curd into smooth paste along with soaked urad dal.
  4. Add just enough water to make the ground mixture soft and thick.
  5. In a mixing bowl, add ground whole bajra batter and sooji. Keep it for half an hour.
  6. Add Chopped tomatoes, capsicum, ginger-chilly paste, coriander and salt.
  7. Make thick batter like uttapam.
  8. Heat the non stick pan (tawa) and spread uttapam.
  9. Add butter from side, and on slow gas cook til golden brown on bottom.
  10. Apply butter on the top side and turn the side.
  11. While other side is cooking add grated cheese on golden side.
  12. Once cheese is melted and other side is cooked take out and serve hot with coconut chutney.
