Baby corn paneer jalfrazie, a medley of different vegetables is not only pleasing to the eye but equally appealing to your taste buds. A vitamin packed fare, rich in fibre and proteins, this recipe is great for increasing immunity as well as for cleansing the intestine. I’ve made use of low-fat paneer instead of the high-fat version commonly available in the market in order to reduce the calorie content. Serve it piping hot with fresh whole wheat parathas to make a delightful meal.

Method
  1. Heat the oil in a kadhai and add the cumin seeds.
  2. When the seeds crackle, add the asafoetida, ginger-green chilli paste, spring onion whites and capsicum and sauté on a medium flame for 2 minutes.
  3. Lower the flame, add the baby corn, turmeric powder, chilli powder, tomatoes, tomato purée and salt and sauté for 4 to 5 minutes or till the baby corn is cooked.
  4. Add the paneer and spring onion greens and toss gently. Serve hot garnished with coriander.
