Rang bhare baby corn! Chunks of baby corn cooked in a spicy coriander paste, this dish is delightful to see and taste.

2 cups baby corn, cut into 4 lengthwise
1 tsp lemon juice
1 tsp sugar
3 tbsp oil
salt to taste

To be ground into a paste
1 1/2 cups chopped coriander (dhania)
12 mm. (½") piece of ginger (adrak)
2 cloves of garlic (lehsun)
2 green chillies
1 cup chopped onions
1 tsp cumin seeds (jeera)
1/2 tsp lemon juice

For the garnish
1 tbsp sliced tomatoes
4 lemon wedges

  1. Heat the oil in a pan, add the prepared paste and sauté for 5 minutes.
  2. Add the baby corn, salt and 2 tbsp of water and mix well. Cook for 1 minute.
  3. Add the lemon juice and sugar. Mix well.
  4. Serve hot garnished with the tomatoes and lemon wedges.
