Whip up a desi delight with the hugely popular baby corn. Baby corn marinated in buttermilk and deep fried a perfect start to a meal.

Ingredients


16 baby corns
2 tsp cumin seeds (jeera) powder
1/2 tsp black salt (sanchal)
1 cup buttermilk
1/4 cup plain flour (maida)
1/2 cup cornflour
salt to taste

Other ingredients
oil for deep-frying

For serving
chilli sauce

Method
  1. Make a marinade by mixing together 1 tsp cumin seed powder, rock salt, buttermilk and salt. Keep aside.
  2. Wash and slice each baby corn into 2 pieces vertically.
  3. Marinate them in the marinade for at least 3 hours.
  4. Meanwhile, mix together the plain flour, cornflour, the remaining cumin seed powder and salt with enough water to get a batter of coating consistency.
  5. Heat the oil in a kadhai, dip the baby corn pieces in the tempura batter and deep-fry till golden brown and crisp. Drain on absorbent paper.
  6. Serve hot with chilli sauce.
