Avocado Spinach Dip

This is a very bold tasting and full of iron rich dip recipe with the combination of spinach,avocado and ginger.Green colour of spinach mixed with yogurt looks very attractive and eye catching. Great with pita chips,can also be served as dressing on salad.

Makes 6 serving


Ingredients

1 small clove garlic (lehsun) , minced
1 large avocado
1/2 cup plain yogurt
1/8 tsp fresh ginger (adrak) , minced
1/2 tbsp lemon juice
4 cups fresh chopped spinach (palak)
1/2 tsp salt
1/4 tsp curry powder
dash of cumin seeds (jeera)
dash of chilli powder
dash of cayenne pepper

Method
  1. Wash the chopped spinach and steam for 1 minute. Cool and squeeze to remove all the water. Keep aside.
  2. Combine avocado and garlic and blend to a smooth paste in a mixer.
  3. Mix together ginger, lemon juice, salt,curry powder, chilli powder, cumin and cayenne pepper in a blender and blend to a smooth paste. Add this paste to avocado mixture. Mix well.
  4. Add spinach and yogurt to make a mixture of dipping consistency.
  5. Keep refrigerated for at least for an hour.
  6. Served chilled with tortilla or pita chips.
