This curry has an unusual combination of vegetables which makes the dish particularly flavourful. An ideal companion for a bowl of steaming rice.

Ingredients


1/2 cup drumsticks (saijan ki phalli / saragavo) , cut into 25 mm. (1") pieces
1/2 cup french bean cubes
1/2 cup cauliflower florets
1/2 cup potato cubes
1/2 cup green peas
1/2 cup brinjal (baingan / eggplant)
2 tbsp oil
salt to taste

For The Paste
1/2 cup grated fresh coconut
1 tsp coriander (dhania) (dhania) seeds
5 garlic cloves
3 whole dry kashmiri red chillies , broken
1/4 tsp turmeric powder (haldi) (haldi)
1/2 tsp tamarind (imli) (imli) pulp

Method
For the paste

  1. Heat the oil in a small pan, add the coriander seeds and garlic and sauté for 2 minutes.
  2. Add the dry red chillies and sauté for 1 more minute.
  3. Add this tempering to the grated coconut and grind to a smooth paste along with the turmeric powder, tamarind and a little water. Keep aside.

How to proceed

  1. Heat the oil in a pan and add the drumsticks with ¼ cup of water. Cover and cook till the drumsticks are half done.
  2. Add the remaining vegetables and salt and mix well. Cover and cook till the vegetables are tender.
  3. Add the paste and 1 cup of water and bring to a boil. Simmer for 5 to 6 minutes and serve hot.

There is some mistake in this recipe! It says garlic n clove together! Please correct it!!! it spoils the dish if someone new like me tries this recipe!
