Assamese mutton curry, it is best served with rice.

Makes 4 to 6 servings


1 kg mutton cut into medium pieces
3 tbsp ginger-garlic (adrak-lehsun) paste
1/4 cup onion paste
2 tsp mustard (rai / sarson) oil
salt to taste
2 tbsp oil
1 bayleaf (tejpatta)
1 cup sliced onions
1 tsp meat masala (optional)
1 tsp garam masala
2 potatoes cut into big cubes and fried

For The Garnish
1 tbsp chopped coriander (dhania)

  1. Combine the cubed meat in turmeric, 2 tsp ginger-garlic paste, onion paste, mustard oil and salt in a bowl and allow to marinate for 2-3 hours.
  2. Heat the oil in a pressure cooker add the bay leaf and onions, fry until golden.
  3. Add the remaining ginger-garlic paste and fry for a few seconds.
  4. Add the marinated meat, meat masala (optional )and cook until till oil separates.
  5. Add the garam masala, little water and the fried potatoes, mix well and pressure cook for 3 whistle.
  6. Remove from the flame, open the lid and transfer the curry in serving bowl.
  7. Serve hot garnish with coriander.
