An unusual vegetable which sounds expensive but is not.

6 large cooking apples
3 onions
3 tomatoes
1 capsicum (optional)
1 tbsp sugar
2 tsp chilli powder
3 tbsp oil
bread croutons and butter
salt to taste
1 tsp chopped corriander (dhania) for decoration

  1. Cut the vegetables into cubes.
  2. Heat the oil thoroughly in a vessel, add the onions and cook for at least 5 minutes.
  3. Add the tomatoes, capsicum and chilli powder. Cook until the tomatoes are soft.
  4. Add the apples, salt and sugar and cook for at least 10 minutes.
  5. Cut a few slices of bread into triangles. Apply butter and bake in a hot oven at 4oo F. until crisp.
  6. Surround the vegetable with pieces of toast, sprinkle coriander on top and serve.
