Cinnamon flavoured apple pie with ice-cream is a traditional favourite.

Ingredients


For the apple filling
6 cooking apples
3 tbsp sugar
2 tsp lemon juice
1 tsp cornflour
1/2 tsp cinnamon (dalchini) powder

For the shortcrust pastry cases
200 gms plain flour (maida)
100 gms butter
1 tbsp powdered sugar
a pinch of salt

Other ingredients
vanilla ice-cream
orange marmalade
cherries

Method

    For the shortcrust pastry cases

    1. Sieve the flour and salt together.
    2. Rub the butter into the flour with your finger tips. Add the sugar and mix well.
    3. Gradually add enough ice-cold water (approx. 2 to 3 tablespoons) to make a dough. Lightly flour the rolling pin and the pastry board.
    4. Roll out the pastry.
    5. Cut rounds of pastry using a large fluted cutter (unless using fluted patty tins).
    6. Press into patty tins (which need not be greased unless new).
    7. Prick all over with a fork.
    8. Bake blind in a hot oven at 230 degree C (450 degree F) for 10 to 15 minutes.
    9. Cool.

    For the apple filling

    1. Cut the apples into slices.
    2. Mix 3/4 teacup of water with the sugar and lemon juice. Add the apple slices and cook until soft.
    3. Sprinkle the cornflour and cook for 1/2 minute.
    4. Finally, sprinkle the cinnamon powder.

    How to proceed

    1. Fill the warm filling into the pastry cases. If you like, sprinkle brown sugar or brush with orange marmalade on top and bake in a hot oven for 1 minute.
    2. Decorate with cherries.
    3. Serve with vanilla ice-cream

    Its a classic apple pie recipe that is decorated with a beautiful orange marmalade to give it an extra flavour. the Cinnamon flavous is a stand out. goes well with litchi ice cream!
