Apple Crepes

Delicious wafer thin crepes folded over a spicy sweet apple filling and glazed with orange marmalade.

Ingredients


For The Pancakes (makes 12 Pancakes)
1/2 cup plain flour (maida)
1/2 cup cornflour
3/4 cup milk
2 tsp melted butter
a pinch of salt

For The Apple Filling
4 apples, thickly sliced
2 tbsp butter
4 tbsp sugar
1/2 tsp cinnamon (dalchini) powder

Other Ingredients
1 cup whipped cream

For The Glaze
5 tbsp orange marmalade
2 to 3 tbsp water
a few drops of lemon juice

Method
For the pancakes

  1. Mix the plain flour, cornflour, milk, salt and 1/2 cup of water. Mix very well until no lumps remain.
  2. Grease a 125 mm. (5") diameter non-stick pan with the butter.
  3. Pour 2 tablespoons of the batter, tilt the pan around quickly so that the batter coats the pan evenly.
  4. When the sides starts to peel off, turn the pancake around and cook the other side for 30 seconds.
  5. Repeat for the remaining batter, greasing the pan with butter when required.
  6. Keep aside.

For the apple filling

  1. Melt the butter.
  2. Add the apple slices, sugar, cinnamon powder and continue cooking until the sugar has dissolved and the apple slices are well coated and soft. Cool and keep aside.

For the glaze

  1. Mix all the ingredients in a pan and stir over gentle heat. Keep aside.

How to proceed

  1. Spoon some of the apple filling carefully over each pancake and top with some of the whipped cream.
  2. Roll the pancakes and place them in a pan containing the warm glaze.
  3. Turn over and serve warm.

Tips
  1. Do not overcook the apples as the filling will become soggy, making it difficult to serve the crepes.
