A delicious appetiser that can be served along with a meal or at any time of the day as cooling refresher in the hot desert summers. Sweetened tamarind water spiked with black salt,pepper and cardamom powder. Serve this drink topped with plenty of ice cubes to thoroughly enjoy its sweet and tangy flavours.

Ingredients


2 tbsp tamarind (imli)
8 to 10 tbsp powdered sugar
1/4 tsp pepper powder
1/4 tsp cardamom (elaichi) powder
1/2 tsp black salt (sanchal)
salt to taste
3 cups chilled water
ice-cubes, to serve

For the garnish
1 tbsp chopped mint leaves (phudina)

Method
  1. Soak the tamarind in 1 cup of water for approx. 2 hours. Crush the tamarind and sieve the pulp through a muslin cloth. Squeeze out all the tamarind pulp.
  2. Add the sugar,pepper powder,cardamom,black salt,salt and 3 cups of chilled water and mix well.
  3. Serve chilled,garrnished with the chopped mint leaves and topped with ice cubes.
