A chinese "bhel" topped with fried noodles, a dish which never fails at parties. Be sure that the noodles are absolutely crisp.

Ingredients


For The Sauce
1/2 cup brown vinegar
1/2 cup sugar
3/4 cup water
2 tbsp plain flour (maida)
1 tbsp soy sauce
4 tbsp tomato ketchup

Other Ingredients
450 gms cabbage , cut into thin strips
3 onions , sliced
100 gms bean sprouts
10 french beans , cut into thin strips
2 carrot , cut into thin strips
3/4 cup boiled noodles
1 1/2 cups fried noodles
4 tsp oil
1 tsp chilli sauce
salt to taste

Method
For the sauce

  1. Place all the ingredients of the sauce in a vessel, mix well and put to boil. Go on cooking and stirring until the sauce is thick.
  2. Keep aside.

How to proceed

  1. Heat the oil in a vessel and add the vegetables. Cook on a high flame for 3 to 4 minutes.
  2. Add the prepared sauce, boiled noodles, chilli sauce and salt and cook for a few minutes.
  3. Add half of the fried noodles and mix well.
  4. Serve hot, topped with the rest of the fried noodles.

Although I find American Chopsuey a rather unhealthy dish due to all the fried noodles, I could not resist trying this recipe. The aroma of the fried noodles and the veggies is very appetizing! The balance between the crunchy noodles and the boiled ones is perfect.
