Aloo and gobhi, an age-old combination that is one of my favorites too. I made a pulao using it just for fun and it turned out to be an invention in itself.

Ingredients

Method
  1. Clean, wash and soak the rice for approx. 15 minutes. Drain and keep aside.
  2. Heat the oil in a pressure cooker and add the bayleaves and cinnamon and fry for few seconds.
  3. Add the turmeric powder, dry ginger powder, chilli powder, potatoes and cauliflower and sauté for 2 minutes.
  4. Add the rice and sauté for 2 more minutes.
  5. Add 3 cups of hot water and salt and pressure cook for 2 whistles.
  6. Allow the steam to escape before opening the lid.
  7. Add the garam masala and mix gently.
  8. Serve hot garnished with mint sprigs.
