Almond And Marmalade Tart

Slices of apple coated with marmalade baked to perfection in an almond pastry.

Ingredients



For the tart dough
200 gms plain flour (maida)
100 gms butter
1 tbsp powdered sugar
100 gms powdered almonds
a pinch of salt

For the filling
350 gms cooking apples
1/2 tbsp lemon juice
2 tbsp sugar
6 tbsp orange marmalade

Other ingredients
1 tbsp biscuit crumbs

Method

    For the tart dough

    1. Rub the butter into the flour and salt with your fingertips. Add the sugar and almonds and mix well.
    2. Gradually add enough ice-cold water (2 to 3 tablespoons) to make a dough. Refrigerate for 15 minutes.

    For the filling

    1. Peel and core the apples. Slice thinly into a bowl and sprinkle with the lemon juice.
    2. Add the sugar and marmalade.

    How to proceed

    1. Preheat the oven to 200 degree C (400 degree F).
    2. Roll out 3/4 of the dough to 3 mm. (1/8") thickness and line a 200 mm. (8") diameter pie dish.
    3. Prick the pastry and sprinkle biscuit crumbs over it.
    4. Spread the apple filling over it.
    5. Roll out the left over dough into a thin sheet and cut into strips.
    6. Cover with lattice strips (criss cross) of pastry.
    7. Bake for 30 minutes till golden in colour.
    8. Remove and cut into slices.
    9. Serve hot or cold with cream or custard.
